This guy was involved in MIT admissions from 2004-2008 and blogged about the process. Very informative. And if you were applying at the time, even better, because you get a real-time update of how long the process is taking.

Has anyone come across anything else like this?

This is for undergrad, something like this for grad school would be great (although impossible) because of the number and divergence of requirements for different fields and schools
