For example, if I am an undergrad applying in the fall of senior year, do admissions care what classes I am taking that semester? For example, I am applying to a field with foreign language experience preferred (very preferred) : Asian art history, for which I have to learn French and German to read western scholarship in the field, as well as the appropriate Asian language (s). I have only taken French and have yet to start German; I have no formal training in Chinese, which is my target Asian language. So, I don't know if my schools will care if I tell them that I am planning to continue to work on foreign language during the semester of application. Thank you so much!

That will be the main concern grad programs will have and you won't be able to start grad school otherwise. Re: language requirements, some programs might care: they might admit you ocnditioned on your fulfilling some language requirement before you begin the program in the fall, or they might just take you at you word that you are studying another language. Either way, if there are languages that you'll need in grad school and you haven't started taking yet, don't wait to start studying them in grad school even if you could. Start learning them now to save time and energy later.
