coursework in semester of application

Does it matter? For example, if I am an undergrad applying in the fall of senior year, do admissions care what classes I am taking that semester?

For example, I am applying to a field with foreign language experience preferred (very preferred) : Asian art history, for which I have to learn French and German to read western scholarship in the field, as well as the appropriate Asian language (s). I have only taken French and have yet to start German; I have no formal training in Chinese, which is my target Asian language. So, I don't know if my schools will care if I tell them that I am planning to continue to work on foreign language during the semester of application.
