I applied to physics programs, and now I've been accepted to top-20 programs with big fellowships.  I also applied to a safety school, which I don't think has any possibility of offering me anything more in terms of research, funding, or academics, so I would like to remove my application from the pool and allow any spot I might get to someone who is still considering the program.  There isn't a link to do this automatically, as I've heard others talk about before, so I'm wondering: how can I tell the admissions committee I'm not interested?

This "safety" school might send you either an offer of admission or a rejection. In the second case, you don't need to do anything. In the first scenario (more probable given that you got accepted to a much better school), you can decline their offer as soon as it comes, thus, not taking away the spot for anyone who is interested.

I emailed the graduate coordinator to ask them to withdraw my application.  I never heard anything back, so I can't be sure that it went through, but that seemed appropriate to me.  Alternatively, as stated above, let them know ASAP if you get accepted so that they can make the offer to someone else.

If you are 100% sure that you are no longer interested, then don't wait for them to accept you to say no. You can email the graduate coordinator directly and let them know the change in your plans. They will make sure the admissions committee know to not review your application anymore, saving everyone a lot of time and effort :)
