Can any of you who have gone on to graduate school with balance left over on your federal Stafford/PLUS/Direct loans from your undergrad days tell me whether you can defer payment on those until you graduate?

Check with your lender on the requirements to defer. Most will have a standardized form you can fill out and have signed by your school verifying current enrollment.
