I received an email a few months ago with: "Warm regards and many thanks" I think it's nice for situations when the person you are emailing is really helping you out. It's just different enough that it stands out with out being over the top.

I have an accepted students visit day next week for Waterloo! I am very excited!! It was one of two Canadian schools I applied to and one of my top choices.

I applied to the McGill CS program and Waterloo's Combinatorics and Optimization. It seems that Waterloo accepts people earlier than McGill, at least according to the survey from past years. Which ones did you apply to?
