Oh hello! I submitted my statement of purpose on Dec. 31 but in the myunt checklist it still says statement of purpose. I guess the graduate college hasn't processed it yet? I'm worried that this means my application will be considered incomplete. Idk if you'll know the answer to this but thanks in advance!

Yeah I actually was just talking to them about this type of thing, they take a few business days to process things and since you submitted the SOP while they were out of the office, it won’t go off the checklist until they’ve processed it. But as long as you submitted it on or before the deadline you’ll be fine.
