According to this person, it allows you to send requests to the professor through the website which stores the letter (while still not allowing you to read it) and you can pull it out when you need a LOR... I don't remember who told me about this and what the name of the service is... does it ring any bells to anyone? TIA! :)

It's more commonly used for the academic job market but very few schools accept it for graduate school applications. As such, I would recommend talking to your graduate programs to make sure they're able/willing to accept letters from Interfolio.
