Preparing a Strong Application?

Hey guys, I am looking for some advice on preparing my application for grad school. I am a recent undergrad that has had 3ish years of internship experience at the UN and am planning on applying for Columbia SIPA's MIA programme for Fall 2020. I am at crossroads deciding what to do in the meantime, I have been on a job hunt for some time now but anything credible for my application requires either a Master's degree or 3-5 years of experience to that specific job. Does anyone have any recommendations for what kind of industry/jobs I could be looking for in New York that are welcoming of recent undergraduates? And would also serve me well for my application?

I also was debating taking a job at a restaurant or something of the sort to have the flexibility of working on my writing.
