OPT Extension while being outside the US

Hey guys, so as unbelievable it might sound, I was able to renew my F-1 visa while being on 1-year OPT and while being outside the US for almost 9 months. Now, as you know with all this COVID-19 lockdowns going on, I'm not sure what I'm gonna do with my renewed visa ☹️ 

Basically, I would like to hear you recommendations/opinion on if there is any chance for me to return to the US using whatever I have now (OPT, F-1 visa and etc).

My EAD expires in July. Is it technically possible to extend my OPT if I get a job offer before July?

P.S. My major is in STEM field.
