Hi everybody!

I am applying to US PhD programs in Economics. I am currently working as a RA on two very different projects (one in economic theory, the other mostly empirical). Indeed, I wanted to have varied research experiences before specializing in a field and I had the opportunity to work with renowned economists in those two areas.

However, in a statement of purpose, is it better to mention future research goals in only one specific field?

Nope. If you have diversified interests, do mention them. You can always narrow it down after you get admitted.
