A professor at one of my schools (a top-10 program in the field) reached out to me to schedule an interview about 10 days ago. I responded with some times that would work for me, but didn't get a reply. After all of those times had passed, I sent another email listing my availability for the following week. Still no reply.

This interview seems to be part of the official process at the school, so I'm relatively confident that I won't be accepted without interviewing. Should I annoy this professor some more (or reach out to admissions), or just give up at this point?

Can you do some spy investigation work? First, is your professor teaching courses atm? He could be busy. 

Can you phone the department (make sure you're talking to a student assistant and not someone important) and kind of poke around with questions, "Is Professor X there today?" "Has he been around?" I'd be honest and tell them that you haven't heard from them (don't be begrudging about it, but rather act like, oh you know how professors are! So absent-minded, pfft, it happens, you feel me, right? - get on the same page as the student). Maybe the professor actually isn't there for good reason.

Next, if you happen to build a rapport with the student on the phone, then perhaps come right out and ask what they think you should do. Tell them your situation - MAYBE expedite this up to one of the admin coordinator at the department, or maybe even the grad coordinator. Ask for advice! Don't complain! Be humble! Be thankful and show that you're sorry - you just didn't know what to do. Someone might understand and give you some assistance.
