Senior year grades

To what degree do senior year grades count towards grad school acceptance since the 2nd semester grades wouldn't be seen by adcomms until after acceptance and most applications will be sent before even the 1st semester grades are tabulated for your gpa?

You're right with your assumption that the last semester grades don't factor into their decision process.  Bear in mind, however, most schools will ask for an official transcript after you confer your degree, if you get accepted.
