Thanks to the University Graduate School for inviting me to attend Recruitment Days and thank you for giving me the opportunity to tell you about my career goals. I enjoyed our conversation and hope that you got a good overview as to my intentions and reasons for returning to academic research. I had a great time meeting the Department students and faculty as well as touring the University facilities. I look forward to hopefully returning to the University as a student. If you have any further questions for me please feel free to contact me. Thank you again!

It sounds fine, but it isn't the way I would have gone.

I would recommend personalizing each e-mail, perhaps talking about some facet of the interviewer's research you found interesting- even paving the road for further conversation on their research.
