So, I've hit it off with this one particular professor, and I plan to apply to study under him for a PhD. I'm taking one of his classes right now, and I meet him in office hours frequently...

Since our interests align very well, I have plenty to talk to him about. I could see myself seeing him every week in his office hours. But, I may run the risk of overexposing myself if I go every week...

I'm thinking every two weeks is good. What do you think?

Whatever you're most comfortable with and as long as the professor doesn't mind.  While professors do have things to keep them busy during office hours, having students show up for their office hours makes their day as office hours are mandate (and professors would rather be at home working than on campus).

Just focus on genuine interactions because you're interested in the subjects being discussed, not to get in the PhD program.

I don't think that there is any right amount of time. If you have things that you want to talk about, then going sounds like a good idea. If not, don't. However often you go, it sounds like you have a good relationship with that professor.
