Oh jeez...I don't even want to sum it up. I applied to 13 schools, took the regular GRE once, and my subject GRE exam twice. Add sending scores...transcripts...good thing most of my applications did not need physical transcripts.
I wouldn't start contacting schools until a few days you see some posts on gradcafe -- but that's just my opinion. I'm in the same boat where I'm not hearing anything and I'm super tempted to ask all of my schools haha.
Keep in mind that state schools are NOT just safeties. Schools like Michigan, UCLA, Texas have excellent mathematics phds programs that are extremely competitive to get into.
I thought about graduating early as well but I had some professors recommend me not to and to get more classes under my belt so I would be better prepared for grad school. In hindsight I think it was a great decision since my last year I got to take a lot of grad classes, and independent reading courses. If you're doing applied might you look and taking more analysis or a PDE course? Maybe complex analysis or functional analysis? If you stay another year you can also retake those GREs. Best of luck on your apps this year though! Worst comes to worst you can apply again next year and graduate in four years!
Things are a little better now that school is at full speed again and I'm busy with classes, work and other school related things. Still...when waiting...time moves so slow no matter how busy you are.
