There are a lot of people who struggle in graduate school yet, namely those straight out of undergrad, since they have not endured obstacles and difficulty in academics up to this point and are used to the "undergrad" mentality of school. I know they do not expect applicants to be experts in the field, but you still have to show some sort of proficiency. Briefly read last 2-3 publications? Read reviews of the topic to better understand the field? Merely gaze over abstracts?

From my experience, PIs tend to talk more about stuff they're working on now, and they want to have a scientific conversation with you. They want to know you can keep up and that you can think like a scientist. They don't expect you to know their research well, but they do expect you to be able to converse with them.
