I can't speak for most schools, because it does vary by PI to PI, but it was a pretty relaxed conversation from my experience with Windsor. I've communicated with two prospective PIs in the past, and they were friendly, provided me with information about their research and what their students were all currently doing. There was a lot of promoting of the program as much as it was trying to get to know you as a potential applicant. Expect the general questions asking about your research interests and what you hope to achieve from your graduate degree. I would say to also ask them more about the development of their program, and the opportunities available doing practicum in Canada and the US, since they are so close to the border. I know there is also an opportunity to be invited to an Open House, but I did not attend that so cannot give you more information than that! I applied to SFU (clinical-forensic), Ryerson, and Guelph (both Clinical). My top choice was SFU, but unfortunately I received a rejection yesterday. My application status online had previously said incomplete and it was missing my transcripts but I checked after I received that email and it's been changed to showing my transcripts have been received with status "under evaluation". due to all the issues I'm assuming their admissions process will likely be delayed. Yes, but if you have only sent out invites for a few people you can take an educated guess. I'm in the same boat as you! This is my third time applying to Ryerson and I got interviews last two years.
